Cheese and Tomato Layer Muffins

This is a savoury muffin with a bit of a twist. The sauce in this muffin helps the mixture not to dry out and they are a lovely change from a sweet muffin. They are great in lunch boxes as well which is what I made them for.

1 egg
3/4 cup water
2 cups self raising flour
1/2 tsp salt
1 1/2 cups grated cheese
3/4 cup tomato cooking sauce

Combine all ingredients in a medium bowl except tomato cooking suace.
Half fill prepared muffin pans with misture.
Put up to 2 tsp of sauce in the middle of each muffin.

Like this-

Cover each muffin with remaining mixture.
Bake at 200 for 15-20 minutes.

whats your secret to that perfectly folded greaseproof paper in the muffin holes? I cannot make mine that neat!
