Chocolate slice

I am not baking much of this at the moment as I am on a diet : )

10 kilos in 8 weeks is my goal and so at the moment I am eating a lot of this-


But a few weekends ago when we went down south with friends it was requested that I make this chocolate slice and so I thought I would share the recipe. I have used this recipe for years as it is really yummy and simple and I always have the ingredients on hand to make it.


125g butter, melted
1 cup brown sugar
1 egg beaten lightly
1 tp vanilla extract
1/2 cup plain flour
1/4 cup self raising flour
2 Tb cocoa powder
1/2 cup desiccated coconut
Combine butter, sugar, egg and extract in medium bowl.
Stir in sifted flours, cocoa powder and then coconut.
Spead mixture over a rectangle slice pan (line the pan if you are not using silicone)
Place in a moderate oven for about 30 minutes
This is what the mixture will look like at this stage.
While the base is cooking make the chocolate icing. You will need-

1 cup icing sugar
2 Tb cocoa powder
10g butter melted
1 1/2 Tb hot water

Sift icing sugar and cocoa powder into a bowl, add combined butter and water and stir until icing is a spreadable consistency. Wait until the base is cool before you spead the icing. Once it sets- cut up and enjoy !! I used M&M's for the top this time as that is what I had on hand, but I often use coconut.

This looks so delicious! I'm not going to make it because I too am on a weight loss trip but I think it would make a good reward for when I get to my goal weight. And the kids will love it!
