Snickerdoodle Cookies


I tried these out the other day and all I can say is oh my gosh I died and went to heaven these cookies warm out of the oven are simply devine. I have always wanted to make them but they are super unhealthy and not the quickest cookies to make. But now they will be a regular appearance in our home.

Ingredients-

250g butter softened
1 tp vanilla extract
1/2 cup brown sugar
1 cup caster sugar
2 eggs
2 3/4 cup plain flour
1 tps bicarb soda
1/2 ground nutmeg
1 tps extra caster sugar
2 tps ground cinnamon

1. Beat butter, extract and sugars with an electric mixer until light and fluffy.
2. Add eggs, one at a time beating until just combined.
3. Stir combines sifted flour, soda and nutmeg in two batches into the egg mixture.
4. Cover and refridgerate the dough for 30 minutes.
5. Meanwhile preheat the oven to moderate.
6. Combine the extra caster sugar and cinnamon in a small shallow bowl. Roll level tablespoons on mixture into balls then roll the ball in the sugar mixture.
7. Bake in a moderate oven for 12 minutes.
